Cilantro Lime Rice

Sometimes a girl just needs a Chipotle fix, but, sometimes, that same girl, needs to eat in more than she eats out. Dilemma, dilemma.

Solution: Make fancy-dancy burritos at home. It's really not that hard.

Step 1: Buy stuff for burritos.
Step 2: Make some Cilantro Lime Rice
Step 3: Stuff all those yummy ingredients you bought into a warm flour tortilla with a generous spoonful of fabulous rice.
Step 4: Eat and Enjoy



Cilantro Lime Rice


1 Tbsp. olive oil
1 cup rice
1 1/2 cups water
3 cloves garlic, minced
3 Tbsp. fresh lime juice
zest from one lime
1/2 cup chopped cilantro
1 tsp. kosher salt


Sauté the garlic and rice in the olive oil over low heat for about two minutes. Add water, lime juice and salt. Bring everything to a boil. Cover until rice is cooked. Add zest and cilantro.

Fluff and serve immediately.
